[OS X TeX] Conversion of special characters in TeXShop

Hi,

I wanted to use TeXShop with XeLaTeX and Hoefler. I want to write in German
and have some special characters like ä. TeXShop converts them automatically
to \"a which is correct. But running XeLateX I get a terrible unnaturally
result with the points very high above the a. But if I copy and paste an ä
directly to TeXShop and run XeLateX I get the normal ä like.
How can I stop TeXShop from converting my ä? Or how can I tell XeLaTeX to
change its behavior?
