Sorry, I didn't make myself clear.

(Using TeXShop 1.35e) I see these extra engines as options to LaTeX in 
a window open on the source file.  But I don't see them in the 
"Typeset" menu, which means they aren't available when I want to run 
(some version of) TeX on a file I have edited externally.  Also, when I 
invoke LaTeX on a file with the initial line
%&program=xelatex
TeXShop runs XeLaTeX on the file only if the source is open for editing 
in TeXShop at that point.  Since I almost never open files in TeXShop 
for editing, I don't get the benefit of this new functionality, but I 
can't see anything that should prevent adding these other engines to 
the general Typeset menu.  My question was whether I was just missing 
something, and there is actually some way to get this behavior (without 
opening the source file in TeXShop); or if not, whether it might not be 
possible to add it.
