If "\usepackage[latin1]{inputenc}" is set but "latex" does not work, 
something is wrong with the TeX system.

"latex" on any document with "\usepackage[applemac]{inputenc}" also 
should work on any TeX system, but on a windows environment you might 
run into problems if you want to edit the file in an editor, which has 
to understand the applemac (MacOSRoman) encoding.

I use the applemac encoding for my files normally (although I am 
thinking about switching to Unicode), but sometimes I use TeXShop to 
typeset latin1 documents without changing any settings. In this case 
some characters are displayed incorrectly in TeXShop, but typesetting 
works fine anyway -- which is not too amazing, since the (pdf)latex 
program has nothing to do with what the TeXShop editor is doing with 
the file, they just work with the same .tex file.
