[OS X TeX] Page size, using plain, TeX and Ghostscript

That is actually what I thought. I tried some experioments with the
\special{papersize=11in,17in} mechanism and it does work in part, but
the TeXShop preview continues to show a letter-size (ie default) page.
The contents of the page move up and down according to the size given
in the \special. Adding to my confusion is this from the TeXShop
"What's New":
Printing now respects the "scale" setting in Page Setup. It does not
respect the "paper size" setting since paper size is set in teTeX.
That looked to be saying that there is some way to communicate with
teTex just what the page size is.
