I've long advocated for LyX, and consider it one of the best, and most
innovative of opensource projects.
The really spiffy LyX for Aqua / Mac OS X port finally pretty much
addresses the first I ever saw of it (could it be made to run in
NeXTstep?), which is especially nice.

(but of course, it'd be even nicer if it were a full port to Cocoa)
