In TeXShop, look in the "Typeset" menu. If "Pdftex" is ticked at the
bottom, then you're ready to roll: TeXShop will typeset your LaTeX
document with pdftex. Just \includegraphics{} as usual, but your
choices are PDF, JPG, and PNG. Quite a lot more versatile than EPS, in
my opinion.
