If you're viewing PDF files in Mac OS X (ie using TeXShop or iTeXMac)
and DVI files (using xdvi or equivalent) in Linux, there's your
difference.
DVI files can be displayed before they're finished compiling (one the
first page has been fully typeset it can be displayed, etc), but the
PDFs produced by pdfTeX must be fully compiled before they're
displayed.
It would be a wonderful thing if this difference was fixed in the
future---pdfTeX is updated on occasion but I doubt producing linearised
PDF is a trivial task.
