Thanks for pointing that out.  I missed that when debugging this 
originally; it apparently gets escaped by C as well, so we can't do the 
conversion on it.  Consequently, this conversion will be removed in the 
next release.

In general, BibDesk only handles characters that are properly escaped; 
by my reading of btxdoc.dvi, any such character should be in braces, 
e.g. ampersand should be {\&} rather than \&, but I could be wrong.  
The ampersand is just a case that we can't convert properly at this 
time.

Anyway, sorry for this regression.
