[OS X TeX] From Times to CM

You can mix and match. Here is what I do:

\newcommand{\myfonts}{
\usepackage{mathtime}
\renewcommand{\sfdefault}{cmss}
\renewcommand{\ttdefault}{cmtt}
}

The command \myfonts redefines the default set such that regular font 
is times, the sf font is cmss and the tt font is cmtt.
