Not the signature, but in the headers.
Whenever I get a message, it contains headers:
Date: Sat, 21 Sep 2002 05:25:56 -0400
Subject: Re: [OS X TeX] unsubscribe
To: TeX on Mac OS X Mailing List <MacOSX-TeX at email.esm.psu.edu>
Reply-To: "TeX on Mac OS X Mailing List" <MacOSX-TeX at email.esm.psu.edu>
Sender: <MacOSX-TeX at email.esm.psu.edu>
Precedence: Bulk

If you don't see these, then it is because your mailer is hiding them.
Find the menu option that allows them to be seen.
