For me, the two differences that make a difference are:

[1] Fonts do not render properly under Quartz in OS X. They do generally
show up correctly under Acrobat. This bug has been reported to Apple and it
will hopefully be fixed in Jaguar (does anyone know if this is the case?).

[2] There is a bug in GS6 that causes it to render certain types of
gradients painfully slowly. This bug has been fixed in GS7 and is the reason
I use GS 7.

I am sure that there are substantially more differences than I have
mentioned.
