This was a deliberate oversimplification to convey the message that altering anything inside /System is ill-advised, unless you know exactly what you're doing.
It's not the installation of an additional font that may break the OS, but the odd erroneous manipulation the inexperienced user may perform while attempting to do so.
In particular, without /System/Library/Fonts/LucidaGrande.ttc the OS will lose its ability to display menus and dialogs (at least on OS X ≤ 10.8 -- on 10.9 it seems that will become Helvetica Neue). Similarly /System/Library/Fonts/Keyboard.ttf and /System/Library/Fonts/LastResort.ttf are generally said to be essential to the OS.
