I use memoir and XeTeX to typeset (usually long) Chinese documents from time
to time, not really a problem if you know the right macro to redefine. ctex
document class (including ctexart for article, ctexrep for report and ctexbook
for book) is just a dedicated class for people who already familar with the
standard document classes in LaTeX and want to switch to typesetting Chinese
document without much more efforts, oh, and it supports more than XeTeX,
I think (though haven't checked for a while) it still supports normal pdfLaTeX
with CJK package, or LaTeX + CJK + dvipdfmx, or LuaLaTeX with LuaTeX-ja.
