First, you do not need polyglossia if you do not need Arabic captions,
bidi is enough.

Second, once you type the vowel signs they remain there forever. If
you do not wish to see them, you have to modify the source code. In
ArabXeTeX you can type the text including the vowels and then select
just by one option whether you want to se the output vocalized or not.
