Are you sure that you have chosen the right part of the character  
palette?  There are various different views that might be tricking  
you.  Here's an annotated picture (like the one Fr. Michael posted)  
pointing out the relevant menus that you need to choose. Ross also  
posted an alternative view. (You'll need to open the PDF document to  
see the annotations; for some reason they don't show up in Mail.)

You need to make sure that the Glyph view is shown, and that Hoefler  
Text Ornaments is selected.

As others have noted, you shouldn't need to know any of the codes; you  
should be able to insert the characters directly into your xelatex  
source.
