I performed tests with the xe-test-*.texfiles supplied by Ulrik:

This is XeTeX, Version 3.1415926-2.2-0.9995.1 (MiKTeX 2.8) (preloaded
format=xelatex 2010.5.20)  6 JUN 2010 18:17
(...)

and found that both the \left & the \right delimiters, and \sqrt were
rendered properly. So there is no problem on my MiKTeX system.

To perform these tests I downloaded the current versions of 'fontspec' and
'unicode-math' from CTAN.
