[XeTeX] fancyhdr and gb4e clash

Always funny with the active characters. Two problems here: 1) using
^^J when there ought to be an \io at newline control sequence for it and
2) document catcodes belong to the document, i.e., ought to be set in
\AtBeginDocument and not when loading the package.

I find the handling of ^ and _ in gb4e.sty somewhat strange (besides
when to set the catcode): it wraps the sub-/superscript in \mathit so
even digits come out italic. Oh well...
