Hi Francois:

I haven't had a chance to work with this, but it works with Garamond
Premier Pro

\documentclass[11pt,oneside]{memoir}
\usepackage{xltxtra}

\defaultfontfeatures{Mapping=tex-text}
\setromanfont[Ligatures=Common, Numbers=OldStyle]{Garamond Premier Pro}

\def\dotunder#1{\leavevmode \vtop{\offinterlineskip \ialign{##\cr #1\cr

\setbox0=\hbox{\raise-.1ex\hbox{{\XeTeXglyph2082}}}\ht0=0pt\dp0=0pt\hidewidth\box0
\hidewidth\cr}}}

\begin{document}

\dotunder{n}

\end{document}

And there *is* a glyph called "dot over" in Gar. Prem. Pro.

Hope that works!
