[XeTeX] xetex doesn't recognize/replace all invalid utf8 bytes

How about using the line

% !TEX encoding = xxxxxx

where xxxxxx is IsoLatin (for Latin1), MacOSRoman (for Mac OS Roman) and UTF-8 Unicode (for ...) near the top of the file BEFORE saving. Will that save it in the encoding you want?
