There is no slanted version of Latin Modern Roman.

Create a new font instance with an artificially slanted upright face  
and create another font instance from Latin Modern Roman Caps – could  
be it works to set up a "compound" statement for a font instance that  
uses the given fonts for the specified faces. Maybe not using  
fancyhdr solves the other problems.
