[XeTeX] Incorporate handmade tables

Hello list,

I have produced with 

\frontmatter

\tableofcontents
\listoftables
\listoffigures

\mainmatter

the table of contents, list of  tables and list of figures. Behind this
tables I want to put a table with symbols and a table with abbreviations.
For all the tables I want to use a roman counter.

The table with symbols and abbreviations is stored in \chapter*{symbols} and
\chapter*{abbreviations}.

How can I do this?
