[XeTeX] Changing font for equations

Silly me, I forgot: if you set the main ("roman") font after  
\begin{document}, this is equivalent to the [no-math] option.

So, you should be fine with

...
\usepackage{fontspec}
\begin{package}
\setmainfont{Minion Pro}
...

if you want \mathrm unchanged by fontspec.
