Ancient Greek is a variant of Greek in Polyglossia. Your sample file
should look like this:

%%%%%%%%%%%%%%%%%%%%%%%%
\documentclass[12pt,letterpaper,openany]{book}

\usepackage{fontspec,xltxtra,xunicode}
	\setmainfont{Lucida Grande}
	\newfontfamily\greekfont{Lucida Grande}

\usepackage{polyglossia}
	\setdefaultlanguage{spanish}
	\setotherlanguage[variant=ancient]{greek}

\begin{document}

\begin{greek}
«᾽Εγώ σου λογιώτερος, ἐγώ σου ἄρα
κρείσσων».
\end{greek}

\end{document}
%%%%%%%%%%%%%%%%%%%%%%%%%%

Best wishes,

Yves
