Just a quick comment on this -- unfortunately the \AtBeginDocument is  
kind of necessary because euler.sty uses \AtBeginDocument itself to  
do its font definitions. So for fontspec to have a hope of doing  
things right if that package is loaded, it can't avoid delaying its  
redefinition of the math symbols. Sorry!
