[XeTeX] Proper mapping for í in bibliography - {\'\i} or {\'i} ?

This works, but then one has a font problem. I just tested it in a  
paper and while Bibdesk is happy to save in UTF-8 any character  
string, if one's document font does not have the glyphs, the BibTeX  
run will result in white space.
I guess the next question is how to specify a font for BibTeX…
