Download LatexmkTeXShop.zip from <http://homepage.mac.com/herbs2>.
The .engine files are scripts and can be adapted to call latexmk with
other parameters and they also get initialization information from rc
files that are included. You should be able to model scripts from
xelatexmk.engine and xelatexmkrc for your own use, including other
options for latexmk.
The latest version of the latexmk with documentation, etc., is
included in that .zip file.
