Thanks - most helpful!  That's the first time I've managed to see all the 
command-line options.

XeTeX has no man page that I know of. What seems to provide usage
information from the command-line is, for XeTeX:

xetex -help

for xdv2pdf (on the Mac):

xdv2pdf

for xdvipdfmx:

xdvipdfmx

So much for standardization!
