The errors you are seeing with rebuilding (non-XeTeX-based) LaTeX  
formats almost certainly come from this. Your Unicode Greek and  
Sanskrit patterns are probably not valid (and certainly not actually  
useful) in a non-Unicode engine such as pdfTeX, and they'll be giving  
errors ("not a letter", "bad character code", etc) during the format  
compilation.

I'm not really sure how the scripts handle error conditions, but most  
likely the result is that latex.fmt and pdflatex.fmt didn't get  
rebuilt; but you've still got old versions and they still work (as  
nothing much has changed in that area), so you may not notice any ill  
effects.
