I know Jonathan's already commented on this, but it's really  
important people understand the difference between font mapping and  
xunicode.

xunicode converts macros to unicode chars: \textemdash to —
font mapping converts unicode chars to unicode chars: --- to —

font mappings can also be used to do things like create ligatures and  
perform transliteration.

xunicode provides a wealth of macros to more conveniently access  
unicode characters by referring to them with command names.
