Hi,

Well, my data (so far) is always generated in MATLAB, so I use that,  
grudgingly. If I didn't I'd look at MetaPost, which has a graphing  
module. MetaPost, if you don't know it, is a bit like TeX, but for  
graphics. If you don't mind not having a GUI program, it's quite nice.
