[XeTeX] Newbie needs help using packages with XeTeX

I was under the impression that it should be xelatex, but I tried both
just in case and neither worked. I'd love to learn how to use this,
but it seems like there is absolutely *no* documentation aside from a
few lines about fonts. Suggestions for how to learn it without
documentation would be much appreciated.
