Oh!
I don't know what the problem is :(

\newcommand* means that its argument can only contain, at most, a 
single paragraph.
Alternatively you could just use \newcommand and then you wouldn't need 
the environment as well.

For both \newcommand and \newcommand* it's safe to leave out the braces 
for the command you're defining, also.

Maybe \language=\sanskrit needs to be -before- the font change? That's 
the only thing I can thing of...
