[XeTeX] Confusion with encoding

Yes indeed. Using fontspec you could write 
\defaultfontfeatures{Mapping=tex-text} at the beginning of your 
document. Would it perhaps be better if I automatically enabled this 
feature unless a package option on the contrary was issued?
