It turns out that some structures did not have proper endianness tests.
This is now fixed in #19032, thereby invalidating existing little endian
format files.

I have verified that the old x86_64-linux/luatex could read and process
documents with the i386-linux that George sent me (so there seem not to
be any variable size issues), and that the new x86_64-linux/luatex can
read and process documents with the sparc-solaris luatex.fmt that George
sent me, as well as with its own fresh generated format (so that should
take care of endianness issues).
