In the past, this workflow has been deemed to be too advanced for the
average/new user. For one thing, it involves two file formats (dvi & ps)
that many people have never heard of before and usually don't care to
learn about. And for another, it is a complex, multi-stage typesetting
process that usually requires platform-specific code and/or scripts. In
fact, I have never heard of any reason to use this anymore except when
using pstricks (which, as I understand, has been largely superseded by
tikz/pgf?), or to include certain graphics files (which can easily be
converted, some even on-the-fly).
This doesn't mean that I want to persuade anyone not to use this
perfectly valid workflow, just adding it as a default seems
counter-productive for many people (see also the recent discussion on
LuaTeX).

Have a look at
http://code.google.com/p/texworks/wiki/AdvancedTypesettingTools which
contains many setups for several advanced workflows and non-pdf output
formats.
