    xetex: error while loading shared libraries: libfontconfig.so.1:
    cannot open shared object file: No such file or directory

xetex innately depends on a system-installed libfontconfig, by design.
There is no way to avoid this.  Before your note, we have never gotten a
bug report about any missing libfontconfig (and even you said it was not
actually missing, only that it "could" be -- anything "could" be
missing), because it is a core part of how any Unix-ish system finds
fonts these days.  Even headless servers usually end up having X
utilities installed.

    Is there any procedure which can I use to fix the aborted update
    process? 

If you need to ... I doubt you have a pressing need for the xetex flavor
of the brand-new lollipop format :).
    
    From the perspective of an user I don't know what to do
    after fixing the problem?

You can rerun the command that failed:
fmtutil-sys --no-error-if-no-engine=luajittex --byfmt xelollipop
