Howdy,

If you are using one of the latexmk engines, (pdf/xe/lua)latexmk, it will be handled automatically!

If you want to use biber rather than bibtex all the time you can change the BibTeX engine under the Engine tab of TeXShop->Settings… . Then using the Typeset->BibTeX (Shift-Cmd-B) menu command will use biber instead of bibtex.

If you just want to set it for individual documents use the

% !BIB program = biber

TeXShop directive (magic comment) near the top of the file.  Then using the Typeset->BibTeX (Shift-Cmd-B) menu command will use biber instead of bibtex for that document.
