[OS X TeX] [0S X TeX] Writing a book

(Sorry if I'm doing this not quite right -- it is my first time posting to
the list.)

As someone who might want to publish a book some day, I'm confused by this.
Why would a publisher say he can't handle LaTeX? Isn't it just a matter of
handling the resultant PDF file?
