When you run a job in TeXShop, it'll say something like "This is pdfTeX, Version 3.1415926-2.4-1.40.13 (TeX Live 2012)" in the console. This tells you the version (for me, TL 2012, which is up to date).

Yes. Sorta. You don't *need* to, and it's a rather large download, but it's a good idea. You get the latest from http://www.tug.org/mactex/
