Ask you shall receive (it is that time of the year). The release candidate of Dropbox 2.6.0 now has a menu entry for pausing sync. You can grab it here:

Dropbox doesn’t appear to be AppleScript aware, so you won’t be able to use Automator to script the ability to pause.
