I have that pref turned off because there are some files for which I don't want (or need) to see the extension. TeXShop should honor the checkbox in its save dialogs when not overridden by Finder's preferences.

To activate application exposé, click and hold on an application's dock icon OR use the gesture specified in System Preferences -> Trackpad -> More Gestures (downward four finger swipe by default) and that application's current and previously opened windows appear. If that application has no currently open windows, File -> Open Recent -> Clear Menu is supposed to clear all previously opened windows/files. Right now, TeXShop isn't doing that. I can force it to by clearing my application cache with Onyx and logging out and logging back in (or restarting).
