Howdy,

The easiest way to avoid the mess with un-matched $ signs to turn on Key Bindings (in TeXShop 2.41---it used to be called Auto Completion). You can turn them on/off for one file at a time using Source->Key Bindings->Toggle On/Off (the setting is NOT remembered on a file by file basis). You can turn it on/off by default by checking/un-checking the box by TeXShop->Preferences->Source->Editor->Key Bindings. I don't remember if the $#SEL##INS#$ (#SEL##INS# means selected text and the insertion point) is part of the default set of key bindings but, if it isn't, it is easy to add by using the Key Bindings Editor (Source->Key Bindings->Edit Key Bindings File…) in TeXShop 2.41.
