It does. I am not a specialist of Xe[La]TeX, but the sample file "short 
multilingual sample.tex" contained in 
<http://scholarsfonts.net/samples.zip>, referenced from the xetex web 
site <http://www.tug.org/xetex/> shows clearly that hyphenation works 
with greek text.
