I tried GoodReader and it works! I have LaTeX on an iPhone :)

It is a little bit cumbersome. You have to download the file from DropBox,
edit it and then upload it again (which takes more than a few clicks). Of
course there is no syntax coloring or other TeXShop niceties, but at least
GoodReader allows you to adjust the font sizes to use huge fonts (I used
Courier 24pts.). It is also a very good PDF reader and you can upload files
to many services (GMail, Google Docs, etc.).

One can then make tweaks to documents, and write letters (I have a
letterhead template I use in LaTeX, for example), send the file to DropBox,
wait a few seconds for the pdf to be produced download it back and then from
GoodReader attach it to an email and send it.
