If it is true that TeXShop typesets (much) faster than TextMate
(although both just call the same unix executable), it would be
good first to have it documented, and then to find out why.

Text rendering in the console window is one thing that comes
to mind... Another issue is how the child process is spawned.
(Does it involve AppleScript or does tex run through a pipe?
How is the pipe configured? I would be interested in knowing
some technical details about this.)

Some years ago it was found that Terminal.app had slow rendering,
but this slowness went away in later versions of the Terminal.
On my current system (10.5.8), typesetting in the Terminal appears
to be a bit faster than in TeXShop (7 seconds versus 8 seconds,
on a 420-page document with many figures). (I haven't got
TextMate to benchmark.)

Cheers,
Joachim.
