This isn't really a MacOS TeX question, and it really has nothing to 
do with TeXShop at all, which is an editor.

But the answer to your question is to use the longtable package. 
(Part of any standard distribution.)

For this kind of question, it would be best to buy a copy of the 
LaTeX Companion, (Michel Goosens et. al, Addison Wesley)  which 
covers almost everything you would need to know about the major 
packages.
