Latex dos not read it, but TeXShop does! And Herb was assuming that  
you are using TeXShop to latex your file.

If you look into /usr/local/texlive/2008/bin/universal-darwin you'll  
see that latex is a sym-link pointing to pdftex. This programme is  
able to read the name by which it is invoked. If this name is "latex"  
it will produce DVI as output format, if the name is "pdflatex" it  
will produce PDF as output format. If you invoke this programme by  
either name and add "-output-format=FORMAT" where FORMAT is either  
"dvi" or "pdf" you can make both producing non-default output.
