[OS X TeX] Strange differences between paths in \include, \input and \includegraphics

I mean PDF files to be included as attachments of letters. Such PDF  
files are located on very different places in ~/Documents. And such  
directory trees oftenly contain a lot of spaces and umlauts. So it's a  
mess to handle this in a really easy way.
