[OS X TeX] getting pdflatex to use Adobe fonts instead of Nimbus.

In case of PDF files you don't need to embed/download Times. In case  
of PostScript you might need to tell the programme a list of  
substitutes or make the PS fonts accessible for it. Maybe it works to  
patch the URW fonts that they identify themselves as Times ...

Another option would be to buy. Either the fonts or a PostScript  
printer with these fonts (on CD). Finally, FontForge can handle  
Apple's DFONT files.
