I've been hit by exactly the same problem last week, when using the  
pdfpages package: LaTeX complained about the absence of everyshi.sty.  
I switched to gwTeX, which fortunately includes everyshi.sty.

This is with the development release texlive-2007-dev.dmg of MacTeX/ 
TeXLive-2007, downloaded from <http://www.tug.org/mactex/morepackages.html 
 >. I don't now whether the same omission affects the regular version  
MacTeX.dmg from <http://tug.org/mactex/>.

I remember vaguely that Dick Koch posted once a link to a detailed  
listing of the content of MacTeX. However I can't find this link  
anywhere at the MacTeX site, even at <http://tug.org/mactex/whatgetsinstalledwhere.html
